Viticulture
Based in Reims, Mumm Cordon Rouge Rose is selected from over 300 base wines and aged for a minimum of 20 months in the Maison's cellar prior to release. There is a light dosage of 8 grams per litre. The Mumm style is led by the high proportioin of Pinot Noir in the blend which gives a light and fresh style.
Vinification
The winemaking technique is similar to Mumm's NV Champagne, however, around 15% of the base wine is Pinot Noir sourced from Montagne de Reims which has had full skin contact during fermentation, hence increasing the colour and making this NV a rose wine. Dosage is also 10g/l and the wine spends 3 years on the lees in bottle before degorgement.
Food Match
A delightful aperitif but also complements salmon, trout or Eastern style fish dishes such as tiger prawn tempura with sweet chilli sauce or red snapper in a sweet and sour sauce.
