Tasting note
Serious but utterly enjoyable Gamay from this top village in Beaujolais, packed with wild cherries and strawberries and aromatic with herbs.
Vinification
From a directly South-facing slope near the Côte de Brouilly, on granitic soils. Low yields, naturally fully ripe. Hand harvested to preserve the whole bunches. No chaptalisation. Indigenous yeasts. Semi-carbonic maceration with ageing in old wood foudres and bottled with no fining or filtration.
Food Match
Poultry and white meats. Excellent acid balance to cut through fattier cuts.
