Tasting note
Discover Nero d’Avola di Noto with typical characteristics from less limey soils. Aromas of jasmine, prune together with balsamic notes of bay, incense, and Mediterranean macchia. Complemented by exuberant Merlot. Fruit-forward with balanced wood influence. Spicey and acidic notes softened by the alcohol balanced with tannins.
Viticulture
Enhanced by organic practices & SOStain®: Ground cover with beans, vetch & wild flowers for soil vitality; plant health ensured with minimal sulphur & copper; pest control via beneficial insects, natural extracts, zeolite & kaolin.
Vinification
Handpicked, taken in small carts to the winery. Destalked, pressed, into 150 hl stainless steel tanks. Activated 3 times/day, short pumping-over (10-25 min) maintains intact skins. 8-day fermentation, starts at 15°C, ends at 25°C. After, 18 days skin contact, then racked. Malolactic in same tanks. Dec-Jan, maturation in 50% 4th use, 50% 5th use French oak.
Food Match
A red wine of great conviviality, and easily matched with contrasting flavours. Seasoned meats, mature cheeses; salami; grilled meat; sweet-sour dishes. Even with artichokes.
