Tasting note
Exotic Pinot Noir from volcanic soil with a very Sicilian touch of wildness, fragrant with carob, bergamot and orange peel, with wild blackberry, cherry and balsamic on the palate and a final, defining sliver of graphite.
Viticulture
The vines which produce this wine grow on the lava flow formed by the 1614 eruption of Mount Etna; a legendary event that lasted for ten years. A small area contains the Pinot Nero which has been cultivated in this area for centuries, even if sparsely. The result is an absolutely original version of this noble variety.
Vinification
The grapes are hand-picked, destemmed, then fermented in open-top large 900-litre old oak barrels at around 22°C, with gentle manual punching down, followed by 12 days lying on the skins, and pressing in a basket press. Matured for 6 months in large old oak, and for a further time afterwards in stainless steel.
Food Match
Game is a natural pairing - try quail or woodcock. Also perfect with a slice of fresh Caciocavallo cheese, or with a cauliflower souffle.
