Viticulture
Crafted from ancient roots, this wine hails from Milazzo, cherished by Caesar and noted by Pliny. Our small winery by the sea, at Capo Milazzo, nurtures these vines with care. Using spurred cordon and alborello support, we cultivate at 5,000 vines/ha, at 30m altitude.
Vinification
Hand-picked grapes in 14 kg crates undergo careful selection and destalking. Fermented in stainless steel vats for 14 days at 25°C with regular mixing. Soft pressed, followed by malolactic fermentation. Matured for 12 months in 35 hl barrels.
Food Match
Moroccan style barbecue chicken, lamb shish with chilly sauce and herbs. Also spicy pastas, chorizo salads.
