Tasting note
Bright damask red with purple reflections. Ethereal scents of cocoa with mint, plum in alcohol, juniper berries. Slightly tannic on the palate without excess, but fresher and more mentholated. Well integrated wood.
Viticulture
Certified SOStain and in the process of organic certification, Ferdinandea is becoming biodynamic from untouched lands. Following organic farming and SOStain® protocols, they use grassed soils with beans, vetches, and flora to enrich soil. Pest control involves sulfur, copper, beneficial insects, and natural agents like zeolite, kaolin, and plant extracts.
Vinification
The two varieties are hand-harvested at different times, hand-sorted, crushed, and soft-pressed. Fermentation occurs in equal parts in 50-hectoliter wood and steel vats. After a four-week maceration on the skins, aging continues in the same vats, as well as in barriques and tonneaux.
Food Match
A perfect match for this wine would be Quiche Lorraine or in Sicily it would be the equilalent to 'Torta Salata Pasqualina' produced with egg, cheese , Salami or pancetta
