Viticulture
The 2023 Marlborough season began with above-average bunches. Unsettled flowering resulted in lighter bunches, but overall yields were average. Veraison faced instability, narrowly avoiding cyclone damage. Settled weather, akin to early 2000s harvests, yielded fully ripe grapes with concentrated flavors and classic acidity, rewarding patience.
Vinification
Sauvignon Blanc from Dillons Point and Wairau, known for expressive aromatics. Our winery, unique to the sub-region, minimizes skin contact, capturing aromatics and fruit flavor. After settling, cool fermentation in stainless steel retains vibrant flavors. Diverse yeast strains add palate weight and complexity.
Food Match
This wine is versatile and would pair well to a wide range of white meat and seafood dishes. Try with creamy rock oysters, a crunchy summer salad or chicken enchiladas.
