Viticulture
The main portion of fruit for this wine is derived from the clay-rich hillside ‘Raupo Creek’ vineyard, in the Southern Valleys, with the balance coming from the alluvial shingles of the Tatou vineyard. Each vine is hand-tended throughout the season to create a balanced canopy and optimise fruit quality.
Vinification
Fruit hand-picked, destemmed, & cooled. Juice pre-fermentation steeped, warmed, & wild yeast fermented, caps hand-plunged twice daily. 2 weeks post ferment maceration, French oak barriques (7% new), 18 months maturation, bottled unfiltered & unfined.
Food Match
Fantastic with duck pancakes and game bird dishes. For a vegetarian option, try with creamy baked camembert or lentil based dishes.
