Vibrant ruby red with aromas of dark berries and spices. Lively acidity complements the rich fruit flavours, while other varieties enhance texture. Elegant, lingering finish. Cellar for up to 20 years.
Viticulture
Traditional viticultural practices used.
Vinification
Hand-harvested with a double selection process. Destemming prior to fermentation at 31°C, with wild yeasts. Pump-overs and delestage three times a day. Extended maceration for 35 days post ferment.

Rich and gamey meats such as venison and baby goat, duck and rabbit.
