Vinification
Sauvignon Blanc & Semillón: Destemmed, macerated with dry ice 4 hrs, pressed, fined 36 hrs. Semillón in concrete eggs, Sauvignon Blanc in barrels, natural yeast fermentation. Torrontés: Destemmed, no press maceration, selected yeasts, barrel fermented. Aged on lees 2 months, blended, oak aged 4 more.
