Tasting note
Floral, pretty red from Sicily, perfumed with flowers, full of red cherries and tangy redcurrants.
Viticulture
On the gentle hills of the Trapani hinterland, we find this type of land, rich in silt-clay substances, compact and resistant to drought which add a unique complexity and structure to the grapes. All harvesting is done by hand throughout August and September.
Vinification
Grapes are gently de-stemmed by hand in small batches, to better preserve the integrity of the skins. Fermentation occurs at a controlled temperature, between 24º and 26º C. Ageing occurs for between 8 and 10 months, in a mix of French and American barrels.
Food Match
The ideal accompaniment for Italian cheese, cured meats, sausages and Mediterranean finger food.
