Viticulture
Sourced from two prized vineyard sites; a 75 year old vineyard in Ebenezer in the Northen Barossa, the other a 70 year old vineyard in Williamstown, in the Southern-most extremity of the Valley.
Vinification
Two parcels undergo separate fermentation in open fermenters, promoting whole berry presence. Pumped over twice daily, gentle extraction of flavors, colors, and tannins occurs until pressing off skins after 7 days. Each parcel matures individually, with 40% new French Oak hogsheads, for 18 months. The final step involves meticulous blending before bottling.

Venison or Lamb cutlets but equally suited served with a selection of fine hard cheeses would be ideal for this rich wine.
