Tasting note
Ripe red berry, cassis and dark chocolate flavours are complimented by hints of mint on the palate. The wine has fine tannins with a long finish.
Viticulture
Vertical hedge trellis system on decomposed granite soil. Drip irrigation.
Vinification
De-stalked,hand sorted, crushed, pumped into stainless steel tanks, pumped over 8 days, left for 6 days before pressing. Racked to barrel for malolactic fermentation. 18 months in French oak barrels, 40% new French oak barrels, balance in older barrels.
