Lightly aromatic Sancerre rosé from Pinot Noir, with a cool wash of strawberry and raspberry; juicy, moreish and approachable.
Viticulture
The vines are planted southern/south-western. A yield of 60 hl/ha The method of pruning guyot simple of december in march De budding : in spring by leaving 10/14 grappes Thinning and crop in summer at 1,25m.
Vinification
Made exclusively from Pinot Noir. The small vineyard sites yield small parcels of fruit which are harvested and vinified seperately in stainless steeel, temperature controlled tanks with the greatest care possible to respect the delicate, fruity characters. During the fermentation the wine is racked off the skins before too much colour or tannin is extracted
Food Match
The rosé wine will bring spicy touches to exotic dishes chicken cooked with pineapple, thai rice. And charcuterie, salad meats white.
