Tasting note
This second vintage: a "super Tuscan" blend of Sangiovese and 8% Cabernet Sauvignon. Balancing is meticulous to let Sangiovese shine amid Cabernet's intensity. Cabernet adds colour, weight, mitigating Sangiovese's acidity. Black currant, dark raspberry, cedar, orange tea, tobacco create a symphony. Floral undertones and a vibrant finish complete this wien
Viticulture
Sustainable, cover crop, minimum tillage.
Vinification
Fermented on the skins in stainless steel for approximately 5 days, then racked into once-used French oak barrels to mature for 24 months. After bottling, held in the winery's cellars until shipped.
Food Match
Foods on the heartier side of those typically married with Sangiovese wines (due to Cabernet adding weight): roasted and grilled meats and vegetables, mushrooms, hard cheeses, risotto, salmon, spicy pastas, sausages.
