Viticulture
After an extensive search, we found an exceptional place in Leyda Valley, 4-12 km from the Pacific Ocean, for crafting wines with identity. As pioneers in this small, high-quality region focused on cool-climate wines, we produce Leyda Rosé from Pinot Noir.
Vinification
The grapes were hand-harvested in early to mid-March. They were whole-cluster pressed at low pressure (0.6 bar) to avoid phenol extraction and achieve a pale pink color. The process was reductive to protect color and aromas. After settling with pectic enzymes, fermentation occurred in stainless steel tanks at 13.5°C-14.0°C for 16-17 days.
Food Match
Ideal with prawns prepared in any way, as well as goat's cheese.
