Viticulture
The 2015 vintage started very slowly, but with an Indian summer the fruit was picked at optimum ripeness. The fruit came from our select group of growers from the Southcote Estate, Crouch Valley, D’Urberville Wine Estate, Sandhurst Vineyard, Hooperhayne Vineyard and was hand harvested from the 7th to the 27th of October 2015.
Vinification
Shoreline: Bacchus, Pinot Noir, Reichensteiner, Seyval Blanc blend. Fermented separately with diverse yeasts, creating layers of flavours. Aged 4 months on lees for structure. Bottled Feb. for freshness.
