100% Garnacha grape variety shines in aroma and taste. Blackthorn notes and juicy, slightly crisp fruitiness prevail. Silky smoothness follows, textured by the granular quartz-rich granite soil. This mineral quality contributes to the wine's finesse, elegance, floral touch, and enduring finish.
Viticulture
Grapes from three hillside single vineyards (Olivos, La Ladera & Peña Baja). Organic vineyard aged from 50 to 70 years old. Granitic soil, some parts with gneiss and schist. Sandy and slime texture. North orientation. Altitude from 750 to 850 meters.
Vinification
100% whole grape. Cold pre-fermentation. Fermentation in wooden tanks of 33 Hl, using native D96 yeast.Pigeage and foot treading. 12 months total ageing inside of oak french used barrels of 500 litres. Natural malolactic fermentation takes place in barrel. Ageing takes place on its lees. Unfiltered and unstabilished.
