Vineyard
Vineyards located 5km from the Mediterranean sea. This has a massive effect on the climate of the area: it does not freeze in winter, and in the hot season the temperature hardly rises above 31ºC as the Mediterranean breez blows to cool down the climate.Very stable temperature along all the year long. Very poor soils with the mother stone at only 1 mt depth. Clay and sandy. Small plots belonging to different neighbours that have different Mediterranean crops: a lot of biodiversity
Viticulture
Traditional and organic viticulture. We follow the classic "farmers' calendar", very used in the area of Catalonia to decide when to make the works in the field. Manual green pruning and for most of the harvest. We take into consideration the moon cycle for the pruning and the rest of the works in the vines, as we leared from our ancestors.
Vinification
Traditional vinification using yeast from the vineyards (we start the fermentation of a selected plot and we use it to start the fermentation of the rest of the wines). Low addition of SO2. We use the latest téchnology to have a better performance of traditional téchniques.
