Tasting note
Soft and buttery, the nose opens to revel a delicate expression of pomelo, grapefruit and almond. The palate hints at white florals, yellow peach and finishes with a fresh and lingering salinity.
Vinification
Vinified using the classic Champagne method, famed by the region: 100% Chardonnay grapes are pressed gently, with no skin contact to preserve freshness and purity. A combination of oak casks and vats are used for fermentation, and malolactic conversion is prevented from taking place, to emphasise the brisk, linear, clear style of 'un vrai Blanc de Blancs.'
