Rich, fruity red from southern France, juicy with mulberries and blackberries and with a sweet hint of toffee on the nose.
Viticulture
This Côtes-du-Roussillon-Villages AOC wine is made from an assemblage of Syrah, Grenache and Mourvèdre, all from a clay-limestone soil, with rolled pebbles from the foothills of the Corbières.
Vinification
Once harvested, the grapes are de-stemmed, then the fermentation lasts 4 weeks, followed by a malolactic fermentation. The extraction is reinforced by manual pumping over and punching twice a day.
The wine finally benefits from a one-year aging in vats and an 18-month storage in bottles in an air-conditioned cellar. It can be easily kept up to 5 years.
Food Match
Great to accompany quail skewers with dried fruits, poultry in sauce and grilled meats. It can be easily kept up to 5 years.
