Tasting note
A delicious Tuscan Sangiovese, with intense, summery aromas of dusty elderberries and wild cherries, and the classic, evolved, leathery and gamey notes found in Sangiovese with a bit of maturity. It has bright, tangy acidity, soft tannins and lovely, ripe fruit. Delicious, and not in the least bit funky.
Vinification
Organic grapes are handpicked at perfect maturity, destemmed and pressed gently to avoid breaking the skins. They then undergo prolonged maceration during fermentation, to encourage extraction of antioxidants, making sulphur addition unnecessary. Selected yeast strains are also used, to minimise fermentation by-product sulphite production.
Food Match
PAIRING: ideal as an aperitive, even slightly cool. Reccommended to have with fresh string cheeses and charcutrie. Excellent also with grilled vegetables.
SERVING TEMPERATURE: Serve at a temperature of 18°C.
