Tasting note
A noseful of ripe raspberries, cherries and blackcurrants, with chocolate, vanilla and a strand or two of tobacco in the mouth.
Vinification
Hand- picked grapes are fermented in stainless steel. 15 to 20% of the wine is then aged in American and French oak casks for 12 months, before being bottled with a further 6 months bottle ageing before release.
Food Match
Its utmost pairing is grilled Patagonian lamb. It also shines with grilled or roast meats and pastas with rich sauces. Other suggestions are tuna or sword fish in rich sauces and game in a variety of dishes, especially stewed.
