Tasting note
The Xinomavro grape is sometimes called the Greek Pinot Noir and this is complex and delicious with fine acidity and flavours of strawberry, violet, chocolate and vanilla.
Viticulture
Diaporos is a single-vineyard wine made from old vines (planted 1972) grown in Block #5 of Ktima Kir-Yianni, Naoussa at 300m altitude. Block #5 is 1.8ha with heavy, loamy clay, low pH soils - ideal for producing full-bodied Xinomavro. Southeast exposure and high inclination of 15%. It has always produced the best Xinomavro of the Kir-Yianni vineyard.
Vinification
The must is cold soaked for 7 days at 8-10°C, then undergoes a 10-15 day fermentation at 23-26°C in open tanks with pneumatic pigeage. This stabilises the Xinomavro's colour and tannins. Malolactic fermentation takes place in new French oak barrels, with frequent batonnage. The wines is aged for 20 months in oak, then 12 months in bottle before release.
Food Match
A perfect match for rich dishes based on veal and game or with truffle-flavoured matured cheeses.
