Tasting note
Red forest fruits and cherries, supplemented by a perfume of rose petals, give this light-bodied Macedonian red vibrancy, while a scattering of spice adds sensuality to the mix.
Viticulture
Paranga, meaning "The Shack," reflects the winery's state in 1997 when Yiannis Boutaris acquired it. Sourced from Amyndeon appellation growers in Northwestern Greece, vineyards sit at 600m on poor sandy soils. The region's cold winters, warm summers, and four surrounding lakes create a unique, mild mesoclimate.
Vinification
Grapes are hand-picked and sorted before crushing. Each variety’s must undergoes cold soaking at 11-12°C in a reductive environment for 2-5 days. Fermentation occurs at 20-22°C, followed by malolactic fermentation in tanks. Over the next five months, lees are stirred twice weekly (batonnage) to enhance the wine's mouthfeel.
