Vibrant Pinotage, the South African grape variety, here packed with black fruit - blackberry, black plum, blueberry - overlaid with a scattering of spice.
Viticulture
Old bushvines on Hutton soils at 280m elevation, south-facing slopes yield 5-6 tons/ha of concentrated fruit. Canopy management minimizes direct sunlight for Printer's Ink Pinotage's elegance. Proximity to False Bay brings cooling sea breezes, slower ripening, and flavour evolution. Regenerative agriculture ensures vineyard longevity.
Vinification
Cold maceration of 10 days at under 10ºC followed by a short hot fermentation (3 days) before pressing. About a third of the wine underwent carbonic maceration so as to enhance the finer nuances of the Pinotage. Bottled after 24 months in 225L, 2nd, 3rd and 4th fill French oak barrels.
Food Match
Pairs well with marinated lamb or cajun-spiced fish. For a vegetarian option, try with aubergine dishes, grilled mushrooms and dark leafy greens.
