Tasting note
Quirky South African version of an unusual Swiss white wine, this is mostly Merlot, with 15% Chenin Blanc, but white; the nose is delicately imprinted with rose petals, the mouth fills with white peach and quince, the whole is faintly flinty, drinkable...and a talking point!
Viticulture
Merlot is sourced from our Devon Valley property at 270m above sea level overlooking False Bay. Meticulous attention to detail produces a wine that expresses not only site but a unique approach to Merlot. Early picking ensures the retention of freshness whilst maintaining sufficient body and texture.
Vinification
The Merlot is hand-harvested and whole-bunch pressed limiting colour and tannin extraction. Fermentation and maturation in a selection of French oak barrels for up 10 months prior bottling. The wine is lightly fined and filtered prior to bottling.
Food Match
This unique wine commands richer-styled foods such as smoked salmon risotto, juicy crab cakes, sweet scallops and beetroot carpaccio. A white wine for the red meat eaters too!
