Tasting note
A slight blush colour. Fresh fruit aromas of red apple and orange zest. Crisp acidity and a textured mouthfeel. Pomegranate molasses and preserved lemon flavours.
Viticulture
In the Yarra Valley, 2021 is hailed as a top vintage. The cool climate enabled slow, perfect ripening for various grape varieties. Both Upper and Lower Yarra Valley offer fragrant fruit with balanced acidity, great for enjoying now or cellaring. Standouts include Chardonnay, Pinot Gris, and Pinot Noir from cooler sites like Gladysdale and Yarra Junction.
Vinification
12 hours on skins post crushing to allow juice to pick up the natural colour from the skins. 20% fermented in barrel with light solids and the remaining 80% was fermented in stainless steel at low temperatures. 30% new French oak, 70% 1st and 2nd use French oak with 9 months ageing prior to bottling.
