Tasting note
Aromas and flavours of violets, maraschino cherries, black cherries and vanilla. Soft, velvety tannins are supported by the fresh berry fruit profile.
Viticulture
Fruit sourced from Willowlake vineyard in the Upper Yarra. Hand picked.
Vinification
Destemmed, whole berry with four day cold soak. Fermentation in open pot fermenters with hand plunging. A mix of wild and inoculated yeast were used. Ageing in French oak hogheads for 10 months - 30% new barrels with the balance 1st and 2nd use barrels.
