Viticulture
The Pinot Nero grapes are sourced from the higher altitude vineyard areas of Valdobbiadene where they benefit from the cooling influence of the mountain winds. Temperatures drop throughout the nights, allowing the grapes to retain their delicate red fruit flavours.
Vinification
Grapes are handpicked, before being destemmed and crushed. The juice is fermented on skins for a few hours, leaving it lightly infused with the wine’s characteristic blush. Secondary fermentation takes place in sealed steel tanks at a controlled temperature, with the wine’s bubbles being created during this time.
Food Match
Divine with flavoursome, fresh fish dishes. Think tuna sashimi or swordfish steaks, paired with a mango and papaya salsa. Its fruity character will also compliment spicy Eastern dishes.
