Vinification
The grapes are fermented off the skins at a controlled temperature of 18°C for around 8 days. The base wine is then kept in stainless steel vats on the lees which are put into suspension from time to time. Sparkling process: The second fermentation takes place slowly and naturally in large closed containers at a temperature between 12-14°C
Food Match
Ideal as an aperitif or throughout the meal, it goes well with fish-based dishes as well as with light vegetable or white meat dishes.
