Tasting note
This is Rioja made from Garnacha (Grenache) from a single, nonagenarian vineyard; the red cherry and pomegranate flavours elegantly balanced by scented oak and spice.
Vinification
Traditional winemaking, with the grapes 100% destemmed. Fermented with indigenous yeast selected from their own vineyards. Maceration of 21 days with reduced frequency of pump-overs to avoid the extraction of bitter characters. Aged for 12.5 months in 225-litre barrels of which 15% is new French oak, and the remaining 85% in one year old barrels.
Food Match
Young beef, poultry, griled sausages and roasted chicken. Also duck and pigeon with roasted vegetables or pepperoni pizzas.
