Viticulture
Sierra Cantabria Estate wines pay homage to regional traditions, sourced solely from the Sonsierra de San Vicente vineyards. The terrain stretching down to the Ebro river has favourable southern sun exposure, giving these wines a unique character. Biodynamic practices are used and grapes are hand harvested with further selection at the sorting table.
Vinification
Grapes are 100% destemmed, fermenting at 28-32ºC with indigenous yeast. A 14-day maceration with two daily pump-overs, reduced later to prevent bitter extraction. Aging for 24 months in American oak Bordelaise barrels, with 25% new oak and a maximum of 75% 3-year-old barrels.
