Tasting note
Complex, powerfully mineral nose, with intense aromas of citrus fruit (ripe lemon), accompanied by hints of herbs and citrus flowers. Rich body, refreshing acidity and long aftertaste, wιth persistent minerality.
Vinification
Grapes are harvested at full maturity then very gently pressed in a pneumatic press over 6 hours. Vinified in stainless steel tanks, under controlled temperatures. The wine then remains on its lees for 18 months in the tank before bottling. Only 6,000 bottles made of the 2020 vintage.
