Tasting note
Syrah, distinct from Shiraz with Rhône-like freshness. Inky black, aromas of damson, loganberry, Chinese five spice, marzipan, and cherry kernel. Silky palate conceals depth and power akin to raw meat. Swinney's masterpiece boasts freshness, balance, and persistence, defined by oak nuances. Elevate your palate with this masterful expression.
Viticulture
Vines are dry grown using organic principles.
Vinification
Fruit hand-picked from 21-year-old Syrah vines, sorted and crushed into small open-top fermenters. 5% whole bunches, wild fermentation for structure, texture, and opulent spice. 2 weeks on skins, pressed to fine French oak (40% new). Aged 14 months before bottling. Crafted with minimal sulphites and gentle filtration, capturing Syrah's essence.
Food Match
One dish that always works well is Beef Brasato with Pappardelle, a dish that works well with either braised Beef or Oxtail.
