Gently insistent Aligoté, Burgundy's underrated second white grape, here exhaling lemon and lime and gently flavoured with exotic fruit.
Viticulture
In Marey-Les-Fussey, Hautes Côtes de Nuits, Benoît Clément's 33-hectare domain, 10 dedicated to Bourgogne Aligoté. High vines on clay-limestone at 375-430m. Environmentally friendly practices: grass cutting, stripping, vigour control.
Vinification
Mechanical harvest at full maturity. Pneumatic pressing at low pressure. Vinification in thermoregulated stainless steel vats for 2 to 3 weeks, then maturing on lees in stainless steel vats. Filtration to clarify and make the wine shiny.
Food Match
Bourgogne Aligoté is an aperitif wine, to be tasted with cream of blackcurrant (produced on the plateaux of the Hautes Côtes de Nuits), for a traditional Kir. It also combines perfectly with a plate of oysters, snails or parsley ham.
