Viticulture
The vines are planted exclusively on hillsides, at the foot of the Solutré and Vergisson Rocks. The soils are on a diversity of bedrock, the main one being limestone, with exposures differing according to the patchwork of plots.
Vinification
Pneumatic pressing is used to enhance smoothness, temperature-controlled fermentation, analytical monitoring of the vats and strict requirements for the quality of the barrel wood : Pouilly-Fuissé is made with the greatest of care and stringent selection of the vat contents.
Food Match
It can be enjoyed before a meal, but it also enhances food especially lobster, crayfish and fish dishes. It is also a perfect match for quenelles, white meat and poultry in cream sauce.
