Tasting note
This organic Merlot from the foot of the Dolomites, in north-western Friuli, will please lovers of classic claret. It has gentle, subtle scents of dried cherries, cedar, savoury herbs, liquorice, anise and woodsmoke, with crisp acidity, medium body, restrained alcohol and soft, supple tannins.
Vinification
Merlot vines are cultivated organically on well-drained clay-limestone soil. A portion of the grapes undergo pre-fermentation cold maceration, to enhance fruitiness, and there is also post-fermentation maceration 5-8 days to develop texture. 50% of the wine is aged in concrete and 50% in third-fill French oak barrels.
