Albillo
A rare Spanish white, Albillo is known for its golden hue, floral perfume, and full-bodied texture. Found in Ribera del Duero and the Sierra de Gredos, it produces wines with pear, apricot, and herbal notes, often with a waxy mouthfeel. Some expressions are aged in oak, adding nutty depth. Naturally low in acidity, it can feel rich yet balanced, making it an excellent food wine. Best enjoyed with roasted white meats or creamy seafood dishes, Albillo is an intriguing alternative to more common Spanish whites. Though limited in production, its quality and complexity continue to gain attention.
