Verdil
An almost forgotten Spanish variety, Verdil is native to Valencia, where it was traditionally used in blends. Recent revival efforts have showcased its potential as a single varietal, producing fresh, aromatic whites with citrus, green apple, and floral notes. Naturally high in acidity, it retains brightness and energy, making it a valuable component in Mediterranean white wines. Often vinified in stainless steel to preserve its crisp character, some winemakers experiment with lees aging for additional texture. Though still rare, Verdil is gaining recognition as part of Spain’s growing movement to rediscover and celebrate indigenous grape varieties.
