Fresh, bright, citrus aromas on the nose, with a certain stony weight on the palate with minerals and a touch saline on the finish.
Viticulture
Made from the Encruzado grape, indigenous to the Dão region and a rising star in Portugal. Grown on poor granite soils in the foothill of the Serra da Estrela mountains.
Vinification
100% hand-harvested Encruzado. Poor granite soils in the foothill of the Serra da Estrela mountains. Fermentation process starts on the skins in cement vats with indigenous yeasts. After pressing, fermentation continues – one third in new French oak and the remainder in used barrels. The wine is aged a further 3 months in barrel with lees-stirring.
Food Match
Very good with shellfish and white meats such as langoustines or roast chicken.
